Sourdough Banana Bread

Directions
1. Preheat oven to 350°F. Spray a 9 x 5-inch loaf pan with nonstick cooking spray; dust bottom and sides of pan with flour.
2. Whisk eggs in a large bowl; add bananas and mash with a fork. Stir in sourdough starter, sugar, oil, pie spice, vanilla extract and salt. Sift baking powder, baking soda and flour into egg mixture; stir until just combined. Fold in 3/4 cup walnuts; spread batter in prepared pan. Sprinkle batter with remaining 1/4 cup walnuts; bake 45 minutes or until toothpick inserted in center comes out clean and top is golden brown. Cool bread in pan on wire rack 10 minutes; run a small knife around edges of pan to loosen and invert onto rack to cool completely.
3. Cut bread into 12 (3/4-inch-thick) slices; serve with almond butter or cheese, if desired.
