Please welcome our POP stars! Our banana energy pops have it all. These little balls are powerhouses of banana, berry, almond, nut and coconut –crunchy, fruity snacks that are ideal to munch on when you are out and about. But be careful: if you serve this tubby crew, they will be devoured in no time! Small but mighty–are you ready for this delicious show?
Directions
- Break the chocolate into pieces and place it in a heatproof bowl set over a saucepan of simmering water (bainmarie) to melt. Mash the bananas and purée them with 50 g of melted chocolate in a blender.
- Spread the almonds and walnuts out on a baking sheet and roast in a pre-heated oven at 200 degrees (top/bottom heat) for approx. 5 minutes until they are golden brown. Leave to cool and gradually grind them (depending on the capacity of your blender) until very fine.
- Knead together the nut mixture, cocoa powder and banana and chocolate mousse to form a dough and make 21 balls. Chill the balls for 20 minutes.
- To garnish, cover the balls with the remaining chocolate and sprinkle 7 balls with chopped pistachios, 7 with raspberry flakes and 7 with desiccated coconut. Serve with fresh berries to taste.
