Fruit and berries are a popular, tried-and-tested addition to muesli but they also add a sweet and refreshing twist to salads. We have opted for blueberries in this recipe. These small blue berries not only jazz up the taste of the salad, they also provide plenty of valuable nutrients, including vitamins, phytochemicals and tannins.
And the buttery consistency of avocados, bursting with healthy fats, complement a fresh and crisp salad beautifully. Gherkins and onions add a delicious piquancy, and a mild natural yoghurt dressing adds the perfect finishing touch.
Lettuce with avocado and blueberries? That’s what we call fresh and fruity!
Directions
- Slice the gherkins thinly, peel the mandarin. Halve the avocados; using a tablespoon remove them from their skin and cut into cubes. Slice the red onion into thin rings.
- Place all the ingredients, apart from the lettuce, in a large bowl and allow to marinate for approx. 30 minutes.
- Add the lettuce and mix everything together.
Tips & Tricks
You can of course vary the ingredients. Fresh cucumber is a milder alternative to gherkin, for example.

- 350 grammes mixed leaves
