Bubble tea has become a real cult drink in recent years. And it’s not surprising – with the many varieties and flavours of bubble tea, there’s something for everyone. When they hit your palate, the bubbles themselves are just like extra little taste explosions. Drinking bubble tea is simply fun! How about trying a fruity and refreshing orange bubble tea with blueberry bubbles?
Directions
Boil 120 ml water and steep the hibiscus tea in it for 10 minutes. Remove the tea bags and allow the tea to cool. Put 4 tablespoons of tea to one side and stir in 2 tablespoons of honey.
Mix the rest of the tea, the remaining honey and the orange juice with the yoghurt in a blender.
Place the bubbles and ice cubes in 2 glasses and divide the tea between the 2 glasses. Drizzle the hibiscus and honey mixture over the tea and decorate the glasses with citrus slices and sprigs of redcurrants.
Tip: Make the fruit bubbles yourself! Boil up 250 g blueberries in 100 ml water and allow to boil for 5 minutes. Pass the blueberries through a sieve. Measure out 250 ml blueberry juice. Blend 1/3 of the juice with 2 g alginate using a handheld blender and stir into the remaining juice. Leave to stand for 20 minutes. Dissolve 4 to 5 g calcium lactate in 500 ml still water. Using a large pipette, let the fruit mixture drip into the water. After about 10 minutes, sieve the pearls carefully and rinse them.
