Sweet avocado and matcha mousse with berries and grapes

Matcha is considered to be a real superfood and a wonderful pick-me-up, while avocado scores highly with healthy fatty acids and lots of vitamins. So why not combine both food stars? Our sweet avocado and matcha mousse is a particularly fluffy solution. Juicy berries and grapes also lend this popular green dessert a fruity sweetness. Green by name, green by nature!
Directions
To make the mousse: Mix the lemon juice, water, rice syrup, the seeds from half a vanilla pod, 1 level tablespoon of matcha powder and the agar-agar and boil rapidly for 2 minutes. Allow the mixture to cool to lukewarm while stirring.
Cut the avocados in half, remove the stone and scoop out the flesh of the avocado. Purée the avocado with the lemon juice mixture until smooth. Whip the vegan cream substitute and fold it in. Spoon the mousse into a bowl and chill for at least 1 hour.
To make the decoration: Wash the berries and grapes. Halve the grapes. Arrange the fruit on the mousse and decorate with mint leaves. Dust with the remaining matcha powder.
