Produce to the Rescue
Smart Ingredient Swaps When You’re in a Pinch
Halfway through preparing dinner and realize you're missing an ingredient? Before you scrap the recipe or make a last-minute grocery run, take another look around your kitchen.
All natural produce may be able to step in. Knowing a few smart substitutions can keep dinner moving, help you use fruits and veggies before they go to waste and sometimes lead to an even more delicious discovery.
The secret? Think about the job the missing ingredient was supposed to do. Was it there for sweetness, moisture, creaminess, crunch or acidity? Once you know its role, finding a stand-in gets a whole lot easier.
Out of This? Try This!
If you’re missing... Try... Why it works
|
Sweetness |
Ripe banana, applesauce or pineapple |
Fruit brings natural sweetness plus its own flavor and nutrients |
|
Creaminess |
Frozen banana, avocado or Greek yogurt |
These add body and a smooth texture to smoothies, dips, dressings and more |
|
A starch, like potato |
Plantain |
Green-yellow plantain are a perfect substitute for banana. They can be mashed, boiled or roasted, in exactly the same way! |
|
Lemon |
Lime, orange, pineapple or vinegar |
A little acidity can brighten and balance flavors. Start small and taste as you go |
|
Spinach or leafy greens |
Another tender green |
Kale, arugula or other greens may work depending on the dish |
|
A crunchy vegetable |
Carrots, celery, bell pepper or cabbage |
Think texture rather than trying to make an exact swap |
|
Ice for a smoothie |
Frozen fruit |
A convenient way to extend the life of fresh fruit while providing flavor and texture. |
Don't Toss It, Transform It
Ingredient swapping can also help solve another kitchen challenge: using what you buy.
A 2022 analysis of U.S. food loss and waste identified vegetables as an especially important opportunity for reducing household food waste. More recently, a randomized trial found that simply giving households more produce wasn't enough to substantially increase consumption. Guidance that helped people actually use that produce mattered, too.
So, when your bananas turn spotty or your greens start to wilt, don't automatically think trash. Think transformation.
Very ripe bananas? Peel and freeze them for smoothies any time or turn them into Dole Banana Energy Bites, made with banana, dates, oats, peanut butter, flax and chia.
Extra pineapple? Take it in a savory direction with Dole Pineapple Carpaccio, pairing thinly sliced pineapple with arugula, pine nuts and a simple dressing.
Vegetables losing their crunch? Roast them, stir them into soup or add them to a stir-fry.
Next time an ingredient is missing, ask one question:
What job does this recipe need it to do?
Sweet, creamy, crunchy, tangy or colorful, there may already be a fruit or veggie in your kitchen ready to step in.
And who knows? Your Plan B might just become your new Plan A.
