Pancakes on a skewer? Good idea! Our banana pancake skewers set the bar high – not only are they pretty to look at, they also taste wonderful. This small snack delights all snack fans when served with grapes, banana and raspberries and takes no time at all to prepare.
Directions
- Mix the egg whites with the flour, baking powder, almond milk and 30 g of coconut flakes.
- Wash the grapes, remove them from the stems and cut them in half. Cut the bananas into thick slices.
- Heat the oil in a pan. Using a tablespoon, spoon the batter into the pan to make circles approx. 5 cm in size. Cook the small pancakes for approx. 2 minutes on each side. Make 18 small pancakes in total.
- Slide the sliced banana, grapes and pancakes onto wooden skewers. You can be as imaginative as you like when arranging the skewers.
- To finish, blend the raspberries with 1 tablespoon of water and drizzle the raspberry sauce over the banana pancake skewers. Sprinkle the remaining coconut flakes over the top and serve.
