Directions
- Preheat oven to 425°; line rimmed baking pan with parchment paper. Toss green beans and 1 teaspoon oil in a large bowl; spread on prepared pan and roast 12 minutes or until tender-crisp.
- Heat 1 tablespoon oil in a large skillet over medium heat; add onion and cook 12 minutes or until tender and golden brown, stirring occasionally. Transfer onion to a large plate.
- Add remaining 2 tablespoons oil and mushrooms to same skillet; cook over medium-high heat 9 minutes or until liquid evaporates and mushrooms are tender and golden brown, stirring frequently. Add garlic; cook 1 minute or until garlic is fragrant. Transfer mushroom mixture to a separate large plate; cool 10 minutes.
- Prepare Premium Kit as package directs in same large bowl reserving cheese and croutons. Add beans, onion and mushroom mixture; toss. Top salad with reserved cheese and croutons. Makes about 5 cups.
