  1. Peel and finely dice the green plantain. Add a generous amount of oil (about 2 tablespoons) to a pan fryer and fry the plantain cubes until golden-brown. Place on kitchen paper towel to dry, then season with salt and dust with cayenne pepper.
  2. Plantain croutons go with any kind of salad and are also a delicious addition to soups.
