Couscous, a typical dish from the Maghreb region, is a wonderfully versatile grain and still very much on trend. Served in a dish with chicken and a delicious selection of fruit, our colourful couscous salad makes a sociable family meal. Young and old are sure to dig in enthusiastically!
Directions
Place the couscous in a bowl, pour in 300 ml boiling water, cover and allow to swell for about 10 minutes.Meanwhile, rinse the chicken breast and dab it dry. Heat the oil in a pan and fry the chicken breast over a medium to high heat for about 5 minutes on each side. Remove from the hob, season with salt and pepper and allow to rest for approx. 3 minutes.Peel the carrots and cut into fine strips. Slice the celery sticks thinly; keep the leaves as a garnish. Peel the oranges and slice thinly. Peel the pineapple, divide it into six pieces, remove the core and cut into bite-sized pieces.Fluff up the couscous with a fork. Cut the chicken breast into bite-sized pieces, mix it into the couscous with the juices from the pan, the orange juice and the avocado oil. Season to taste with salt and pepper. Divide the couscous between the plates, arrange the carrots, celery, oranges, pineapple and blueberries on top and garnish with the basil and celery leaves.To the bowl, get set, go! - 200 grammes blueberries
- 1 handful basil leaves
