Orange and banana ‘nice cream’ with raspberries

Did somebody mention ice cream? Well this time, we’re making ‘nice cream’! We are delighted to take time for this, as what could be nicer than treating yourself to a short break with a bowl of delicious ‘nice cream’? Oranges, bananas and coconuts give this delicious recipe a tropical vibe.
Directions
- Peel the oranges in such a way that skin and the pith are completely removed. Cut the segments from the membranes and retain the juice.
- Peel and dice the bananas, mix with lemon juice and freeze together with the orange segments for at least 3 hours.
- Mix the coconut milk, orange juice, vanilla extract and maple syrup and chill.
- Place the frozen oranges and bananas in a blender, add the coconut milk and fine coconut flakes and blend until very fine.
- Place the orange and banana ‘nice cream’ back in the freezer and freeze for a short time. Garnish with raspberries and coconut chips before serving.
Tips & Tricks
Before peeling the orange, grate some fine zest and use this as a garnish also.
