Who says coleslaw is just for backyard barbecues and picnics? This sweet-and-tangy slaw is studded with apples and dried cranberries, two of the signature foods of autumn. Our unique dressing adds an additional double hit of fruit by combining intensely flavored apple butter and a generous splash of apple juice with a dash of salt and freshly ground black pepper. Sure, you’ll want to include this seasonal slaw at your holiday table, but don’t forget, these ingredients are available (and taste just as wonderful) year-round.
Directions
- Chop apples and sprinkle with lemon juice in large bowl.
- Add coleslaw and cranberries.
- Toss with Apple Butter Dressing, to taste.
- Refrigerate any remaining dressing.
- Apple-Butter-Dressing: Whisk together 1/2 cup prepared apple butter, 1/4 cup apple juice, 1/4 teaspoon salt and dash ground black pepper until blended.Makes about 2/3 cup.
