Banana and almond cake with cinnamon

Banana bread is one of our absolute favourites! It doesn’t need too many ingredients, it’s quick to prepare and tasty for all occasions. What would it be like if we pepped up our favourite cake? With almonds and cinnamon, for example – both go great with bananas.
Directions
1. Beat the eggs with the honey and some salt until light and creamy. Then stir in the oil.
2. Finely mash 2 bananas with a fork. Mix the mashed banana, almonds, wholegrain flour, baking powder and cinnamon. Stir this in also.
3. Grease a springform tin (20 cm) and sprinkle the flaked almonds around the edges. Pour the dough into the tin and halve the remaining bananas lengthways. Then brush the bananas with lemon juice and agave nectar and lay them on the dough. Bake in a preheated oven at 180 (top/bottom heating) for approx. 35 minutes until golden brown. Allow to cool and then cut. Sprinkle with chopped pistachios and decorate with berries.

A pinch of salt
70 ml walnut oil
4–5 bananas
200 g ground almonds
200 g wholegrain spelt flour
1 tbsp baking powder
1 tbsp cinnamon
80 g almond flakes
1 tbsp lemon juice
2 tbsp agave nectar
Chopped pistachios according to taste
Optional: Berries to decorate if you like
