Banana and courgette waffles with pistachio and orange yoghurt

We have never seen waffles this colourful before! We are really excited today about this banana and courgette variant of delicious waffles with pistachio and orange yoghurt and fruity toppings. Really good ingredients such as chia seeds, spelt flour and, of course, courgette are included in the waffle batter. The highlight: in this recipe, the chia egg is used instead of eggs as a vegan alternative. The delicious waffles are best for breakfast, they look fantastic and keep you full for a long time. Tip: A great alternative to sweet cakes for birthdays!
Directions
1. Allow the chia seeds to soak with 6 tbsp of water for 30 minutes and then puree using a hand blender.
2. Wash the courgette, dry it and coarsely grate it using a grater. Sprinkle some salt onto the courgette and allow it to draw for 30 minutes. Rinse the grated courgette and squeeze it well.
3. Finely mash the bananas with a fork. Mix together the mashed banana, pureed chia seeds, grated courgette, flour, oat milk, baking powder, cinnamon, lemon zest, oil and 1 tbsp of honey. Heat up the waffle iron and cook the batter in portions one after the other until you have 6 waffles. Keep the waffles warm.
4. Stir the soy yoghurt together with 1 tbsp of grated orange zest and 2 tbsp of honey until smooth. Prepare the fruit and cut into bite-size pieces.
5. Spread the yoghurt on the waffles and cover with fruit. Sprinkle pistachios, coconut flakes and mint on top.
Turn on the waffle iron!

A pinch of salt
2 bananas
140 g wholegrain spelt flour
150 ml oat milk
1 tbsp baking powder
1 tbsp cinnamon
1 tbsp grated lemon zest
2 tbsp sunflower oil
3 tbsp honey
250 ml soy yoghurt
1 tbsp grated orange zest
As a topping, according to taste:
Fruit (e.g. mango, banana, grapefruit, berries, kiwi, grapes)
25 g chopped pistachio nuts
Coconut flakes if desired
A few leaves of fresh mint
