Is there a better way to start the day than with coffee and a tasty bowl? Yes! Especially when both are combined – just like in this banana coffee nut granola bowl. Fresh espresso gives the granola its delicious flavor and complements the fruit variety of the bowl perfectly. That's how the day can begin.
Directions
For the granola: Warm the coconut oil in a water bath. Mix hot espresso, maple syrup and warmed coconut oil. Stir in the oat flakes and nuts. Chop the banana slices, grind finely and mix into the mixture.
Spread the granola mixture on a baking tray covered with baking paper and roast in a preheated oven at 200 °C top/bottom heat for approx. 10-12 minutes. Turn frequently during this time. Leave to cool.
For the bowls: Arrange about 150 g vegan yoghurt and some granola per serving in a small bowl. Mix the peanut butter, maple syrup and cocoa. If necessary, peel, wash and clean the fruit and cut into pieces. Divide among the bowls, drizzle with the peanut dip and garnish with edible flowers if desired. Serve the bowls immediately.
Tip: If there is any granola left over, serve with this or store in an airtight box.

2 tablespoons coconut oil
50 ml espresso (hot)
5 tbsp maple syrup
150 g tender oat flakes
100 g chopped nuts (e.g. walnuts, cashews, hazelnuts)
60 g dried banana slices

150 g vegan yoghurt
3 tbsp peanut butter
2 tbsp maple syrup
1 tsp cocoa powder
2 nectarines
2 bananas
100 g grapes
100 g blueberries
some strawberries
Edible flowers to taste
