Hej, hej. If there is one Swedish pastry that we can never say no to, it’s the cinnamon bun. This delightful combination of fluffy yeast dough and spicy cinnamon is simply too delicious. And the added fruit makes our cinnamon buns even better! How about this version with blueberries? Give it a try, it’s worth it.
Directions
Wash the blueberries, chop them roughly and mix with 1 tablespoon of brown sugar.
Place the flour and salt in a bowl. Stir the yeast into 140 ml warm non-dairy milk. Mix the yeast milk, 30 g soft margarine and 1 tablespoon of honey with the flour and knead to make a dough. Cover the dough and leave to prove for 30 minutes.
Roll the dough out thinly on a floured work surface (approx. 35 x 30 cm) and spread 30 g margarine, 1 tablespoon of cinnamon and the remaining sugar over it. Spread the blueberries on top and roll up the dough.
Cut it into pieces approx. 3 cm wide. Place the rolls on a baking sheet lined with baking paper and flatten slightly. Leave to prove for another 30 minutes.
Bake in a preheated oven at 180°C for approx. 30 minutes. Beat together the lemon juice and the chickpea water; stir in the Stevia powdered sugar. Drizzle the sugar glaze over the buns.
