Porridge rightly has a name for being an all-rounder. The satisfying oatmeal dish tastes just as good for breakfast as it does for lunch or as a meal in between times and it combines really well with a wide variety of fruit. How would you like to try out our tropical variant today – blueberry and coconut porridge?
Directions
- Place the oatmeal along with 100 ml of water, the coconut milk, almond milk, vanilla extract and 2 tablespoons of coconut sugar into a saucepan and allow to simmer for 10 minutes while stirring.
- Finely grate the lime, cut the lime in half and squeeze. Mix the zest and juice with the remaining coconut sugar and blueberries.
- Place the porridge and blueberries into glasses in alternate layers.
Tips & Tricks
To make the blueberry and coconut porridge even more eye-catching, garnish with blueberries, coconut chips and mint.
