Directions

To make the dressing:

Peel and finely chop the garlic and ginger. Deseed and chop the chillies. Grate the limes to remove the zest and juice the limes. Whisk all of these ingredients with the rice syrup, rice vinegar, sesame oil, salt and pepper using a balloon whisk.

 

To make the salad:

Clean the red spring onions and slice into rings. Cut the mangos in half, remove the stone, peel the flesh and dice it. Wash the red pointed peppers, remove the seeds and cut into rings. Wash the Thai basil and pick the leaves from the stalks. Wash the organic melon peel, slice off the green part of the peel thinly using a vegetable peeler, as this is too fibrous to eat. Shred the light-coloured part of the melon peel into wafer-thin slices using a grater.

 

 

Marinate the slices of melon peel in the dressing for 30 minutes, then add them, together with the dressing, to the remaining salad ingredients. Season with salt and pepper, and decorate with basil leaves to serve.
