Directions

To make the nicecream: Peel and slice 5 bananas (approx. 500 g), and freeze the slices. Place the coconut milk in the refrigerator. Mix the frozen banana, coconut milk, honey and gingerbread spice to form a smooth nicecream and pour into a chilled container. Break up the gingerbread or spiced cookies and fold into the nicecream. Freeze again for approx. half an hour.

 

Cover a large plate with cling film and chill in the freezer for 20 minutes. Using the ice cream scoop, scoop out balls from the frozen mixture and place them on a plate. Freeze again.

 

To make the banana stars: Break up and melt the dark chocolate. Peel and slice the remaining bananas and cut out little star shapes. Place the banana stars on a sheet of baking paper on a cooling tray and, using a piping bag, pipe the melted chocolate in fine lines over the stars. Leave the chocolate to set.

 

Freeze the raspberries and blueberries for 20 minutes. Arrange the nicecream balls with the chocolate bananas and berries on a chilled plate.
