Today we’re eating a rainbow! Pizza fans will see their favourite dish in a whole new light as a multicoloured granola breakfast pizza with colourful fruit. A crunchy muesli base is topped with a fruity mix of baby bananas, berries, grapes, peach and pomegranate seeds. An inspired breakfast or an exceptional dessert? You decide!
Directions
To make the muesli base: Coarsely grind the fruit muesli mix and the fine oats in a food processor and knead together with the peanut butter and margarine to make a dough.
Divide the dough in half and roll both pieces out on a sheet of baking paper to form a flat circle (each approx. 12 to 14 cm in diameter). Bake in a preheated fan oven at 180°C for approx. 10 to 14 minutes. Allow to cool.
To make the topping: Stir 25 ml of honey into the plant-based yoghurt alternative. Pour this mixture onto the two muesli bases and arrange the washed, finely chopped fruit on top. Garnish with the rest of the honey, the lemon balm leaves and the freeze-dried berries.

70 ml honey
150 g raspberries
2 baby bananas
100 g strawberries
50 g grapes
1/2 peach
50 g blueberries
2 tbsp pomegranate seeds
Lemon balm leaves
1 tbsp freeze-dried berries
Plus: Food processor, baking paper
