Multi-fruit salad with coconut donut holes in a glass

Who says that fruit salad belongs in a bowl? Just like that, we thread this colourful fruit mix onto skewers and enjoy it as a multi-fruit salad from the glass. And because we find it hard to choose from so much delicious fruit, this ingenious fruit salad includes berries, grapes, mango, kiwi and lots of other vitamin-rich goodies. The highlight: baked donut holes! Probably the most creative veggie shish kebab ever.
Directions
To make the donut holes: Using the balloon whisk of a hand mixer, beat together the margarine, 50 ml rice syrup (keep 2 tablespoons to one side) and coconut butter. Stir in the egg. Add the coconut milk and grated lime zest. Mix together the maize flour, baking powder and a pinch of salt and stir into the mixture.
Spoon the batter into a piping bag and attach a nozzle. Heat the bubble waffle iron and grease with oil or margarine. Pipe the batter into the moulds and close the waffle iron. After about 2 to 3 minutes, flip over the waffle iron and bake for another 2 to 3 minutes. Remove the donut holes from the iron and dust with stevia powdered sugar. Divide the rest of the batter into small donut holes and bake.
To make the fruit salad: Clean and wash the fruit and chop into small pieces as desired. Using biscuit cutters, cut the fruit into star and heart shapes. Thread some of the fruit and donut holes onto skewers, mix the rest of the fruit with the remaining 2 tablespoons of rice syrup and add to the glasses. Pop the skewers into the glasses.
