Biscuits for breakfast? Why not! Our pineapple and oat cookies are full of healthy ingredients. This truly tasty treat will ensure you start your day with optimal energy.
Directions
Peel the pineapple, remove the core and finely dice half the fruit. Cut the rest of the pineapple into thin slices and then into small strips.
Mix together the oats, diced pineapple and coconut milk. Using the balloon whisk of the hand mixer, beat together the margarine, cinnamon, vanilla seeds, salt and honey.
Stir the flour into the rolled oats and pineapple mix, fold in the chocolate drops.
Using a spoon, place small portions of the batter onto 2 baking sheets lined with baking paper and press in the small cubes of pineapple. Cover with a small amount of batter and press down flat. Bake in a preheated oven at 180°C for approx. 20 to 25 minutes.
Allow to cool slightly and enjoy a reinvigorated start to your day.
