Summer, sun, ice lollies! We already know what the summer hit of the year will be – our lemon and cucumber peel popsicles. These fruity and refreshing treats are little works of art, guaranteed to wow your taste buds. What’s more, they offer the perfect opportunity to use up leftover cucumber peel. After all, food waste is so last year! The stunning combination of cucumber, lemon, berries and flowers is sure to open up exciting new worlds of taste to you. Freshen your day!
Directions
To make the ice lolly mix: Grate one organic lemon to remove the zest and juice all the lemons. Rinse and peel the cucumber and roughly chop the peel. Purée the grated lemon zest, lemon juice, water, agave syrup (or rice syrup) and cucumber peel in the blender until smooth.
To prepare the popsicle moulds: Cut thin slices of cucumber and use them to line the popsicle moulds; freeze for 10 minutes.
Pour the ice lolly mix into the moulds and pop a lolly stick into each one. Freeze the popsicles. After 3 or 4 hours, remove the popsicles from the moulds and serve them sprinkled with chopped, freeze-dried berries and dried flowers.
Cool as a cucumber!

1 cucumber
230 ml water
120 ml agave syrup or rice syrup
30 g freeze-dried berries
Edible flowers
Plus: blender, popsicle moulds (approx. 80 ml each), lolly sticks
