Picture-perfect! Our sweet grape focaccia could be a match for any famous painting. Grapes, figs, kiwi and blueberries are transformed into a colourful meadow of flowers on the Ligurian flat bread made from yeast dough. On the supper table or when sharing a meal with friends, this oven-cooked delight is a feast for the eyes. Say it with flowers!
Directions
To make the dough:
Place the wholemeal spelt flour in a bowl. Heat the honey and the oat milk and whisk with the yeast, salt and 3 tablespoons of sunflower oil. Add this mixture to the flour, knead, cover and leave to prove in a warm place for 45 minutes.
To make the topping:
Wash the fruit, pat dry and cut into small pieces. Halve the grapes, slice the figs and kiwi. Wash the courgette and cut the peel lengthways into long, thin strips.
Roll out the dough (approx. 30 x 23 cm) and place on a baking sheet lined with baking paper. Stir together 1 tablespoon of maple syrup and 1 tablespoon of sunflower oil and use to brush the dough.
Arrange the prepared fruit to taste as a “meadow of flowers” on the dough. Sprinkle with sesame seeds as “pistils”. Leave to prove for another 20 minutes.
Bake in a preheated oven at 180°C (top/bottom heat) for approx. 20–25 minutes until golden brown.
