Directions

  1. Pre-heat the oven to 180°C (350°F).
  2. Wash the pineapple, pepper and zucchini and cut them into small pieces. Place them on a baking sheet lined with parchment paper, drizzle everything with olive oil and season with salt and pepper.
  3. Place the baking sheet in the oven for approx. 15–20 minutes; if necessary turn the vegetables during this time. If they get too dry, add more olive oil.
  4. Remove from the oven and serve with the cottage cheese.
