Plantain Guac Toast

Directions
1. Heat plantains and 2 cups water in a medium microwave-safe bowl, covered with plastic wrap, in microwave oven on high 15 minutes or until plantains are very tender, stirring occasionally. Reserve ½ cup cooking water; drain.
2. Transfer plantains to a separate medium bowl. Add lime juice, salt and reserved cooking water; mash with a fork and cool 10 minutes. Makes about 2 cups.
3. Toast bread. Spread toast with plantain mixture; sprinkle with nutritional yeast. Top with radishes, onion, pepitas, jalapeños and cilantro; drizzle with oil. Makes 4 toasts.
